食欲をそそるスパイスの香り-Bhoj(2013年2月号)
ギラギラした日差しが照りつける暑い日に、無性に食べたくなるインド料理。
インド料理とひと言で言っても、地方によってさまざまなスタイルが存在するという。
そんなインド各地に伝わるおいしい伝統料理を提供するのが、Docklandsの埠頭に店を構えるBhojだ。
心地良い海風に乗って、食欲をそそるスパイスの香りが鼻孔をくすぐる。
どんな料理に出合えるのか、期待に胸が高鳴った。

    今回は、季節を考慮してあっさりサッパリした料理をチョイス。
まずは、Coldという文字に惹かれてSounth papdi。
丸くサクサクした衣に、タマリンドの香りが印象的な冷たいカレーのようなスパイシーソースとヨーグルトが
絡まった初めて目にする料理。
実は、冷たいカレーを体験するのは初めてで、口に入れるまで一抹の不安があったのだが、意外といける。
カレーと思うと気持ち的に違和感があるが、ソースと思えば新鮮な感覚。
更にヨーグルトの酸味が爽やかさを演出して、夏場にお勧めしたい一品。

定番のサモサは、ベジタリアンのVeggie Samosa with pakodi chatをオ

スがぎっしり詰まっていて、どっしりと重いのにくどくない。
レンズ豆のダンプリン
Pakodi chatは、パンのようではあるが、今までにない不思議な食感。

 やはり外せないカレは、魚や海老、帆立ががたっぷりのSamudri tak a tak
一般的にイメ
ジするカレというよりは、シドのカレス煮と呼びたくなる風貌。
のナンと一にいただいたが、思ったよりも辛くない。ナンはもちろん、ロティやサフランライスとも良く合うので、
調子に
って食べ進んでいたら、ジワジワ辛さがして口の中がピリピリ。
爽快な辛さとゴロゴロした具で食べ
えのあるひと皿だ。

 余談だが、皆さんはナンとロティの違いをご存知だろうか?
一般的に、ナンは小
粉に牛乳や卵、ヨグルト、砂糖などを混ぜて酵させていた物で、
ロティは小
粉に水と塩などを混ぜて酵させずにいた物。
カロリ
になる人には、ロティの方がおめだそう。

 予想外のうれしい驚きに出合えるインド料理店。
次回は、濃厚な料理に挑
しようかな。

 On blazing hot days, one really hungers for Indian food. Though we may use that single word Indian, actually many styles of cuisine exist in the many regions of India. On the quay at Docklands, Bhojis a restaurant offering many traditional regional Indian dishes.

The fragrance of spices hits my nose on the pleasant sea breeze and stimulates the appetite. My heart beats fast in anticipation as I wonder what sort of food I will encounter.

 Today, I take the season into account and choose refreshing dishes. First, attracted by the word cold, I order South papdi. Its the first time Ive seen this dish round and crispy, covered in a tamarind-scented curry-like spicy sauce and yogurt. The truth is that this is the first time Ive had a cold curry, so Im a little uneasy right up until trying it but its surprisingly good. As a curry it might seem strange, but as a sauce its a novel experience. The tartness of the yogurt makes it even more refreshing; I recommend it as a summertime dish.

 For my staple samosa, I order the Veggie Samosa with pakodi chat. Stuffed full of potato and peas, this samosa is substantial but not heavy. The pakodi chat (a lentil dumpling) is bread-like but has a curious texture hitherto unknown to me.

 I cant leave out curry, and choose the Samudritak a tak, brimming with fish, prawns and scallops. It looks more like a seafood curry sauce than a typical curry. I eat it with piping hot naan bread, but it isnt as spicy as I was expecting.  This curry goes well with naan of course, but also with roti bread or saffron rice, and if you keep eating it youll find the spiciness gradually increases and the inside of your mouth will tingle.  With its refreshing spiciness and many ingredients, this is a satisfying dish.

By the way, do you know the difference between naan and roti? Generally, naan is made with flour, milk, eggs, yogurt and sugar, and is leavened before baking. Roti is made with flour, water and salt, and baked without leavening. (For those who are concerned about calories, I recommend roti.)

 Encountering this Indian cuisine was an unexpected delight. Next time, Ill challenge myself and try something richer. There is also a restaurant in Templestowe, so you might want to go there if youre closer. Thanks for the meal.
