手の込んだ、美しい料理を-Estelle (2012年7月号)

最近、個性的なショップの進出が目立つNorthcoteのHigh St.。
そこにグレ
ーと黒、淡いピンクのタイル張りの壁が目を引くEstelle Bar & Kitchenがある。

シェフは、ヨーロッパで経験を積んだScottさんとRyanさん。
ミシュランの星の付く店や日本でも有名な
Paul Bocuse、TVでお馴染みのHeston Blumenthalの店を
経
てきたと聞けば、期待はいやが上にも盛り上がる。

仕入れ具合で毎日微妙に変わるメニューは、牡蠣やCharcuterieの他、3、5、7、9コースがある。今回は、特別にコースメニューから野菜、魚介、肉、スイーツをひと皿ずついただいた。


最初に運ばれてきたのは、Sardine Fossils、 Chickpea、 Pickled Melonのお通し3品。
どれも美しい上に、それぞれ違った味と食感で食欲をそそられる。


前菜が出るなんて本格的、とワクワクしているところへ登場したのが、
Beetroot & ashed goats cheese。

ートルートと珍しいゴールドビートルートは、ゴートチーズ、オレンジソースと
一
緒に食べることによって、素材の個性や良さが相乗効果で引き立ってくる。

魚介料理は、Scallop, miso & seaweed。
火の入り具合が完璧なホタテに、言われなければ味
噌が使われているとは気が付かないが、
どこか馴染みのある味の濃厚なソ
ース、コリコリ歯ごたえのある海草の組み合わせが絶妙。
思わず、目をつむって「う~ん」と至福の時を堪能。

肉料理は、Venison, broccoli & chocolate。鹿肉、と聞くと臭みやクセがありそうだが、
それらを全く感じないのにビックリ。
軟らかい鹿肉の上には、バタ
ーで炒めたブロッコリーのつぼみがトッピングされ、

ークのソースにチョコレートソースとイチジクジャムのほんのりした甘みがアクセントになっている。

どの料理も美しく、手が込んでいて奥行きのある味わい。
なのに、しっかり素材の味が活きていて、
軽く仕上げられているので、日本人には受け入れやすいと思う。
料理に合わせた器も個性的で素敵。素材やプレゼンテ
ーションに対する探究心と好奇心が伺える店。
程良くカジュアルな雰
囲気なので、さまざまなシーンに使えそう。
次回は、友達とのランチに行こうかな。


Recently, unique shops have been noticeably increasing on High St in Northcote.
Estelle Bar & Kitchen, with its eye-catching wall of grey, black and pale pink tiles, is one of these.
The chefs are Scott and Ryan, who learned their trade in Europe.
When I hear they have respectively worked in Paul Bocuse’s Michelin star-awarded restaurant and in the restaurant of Heston Blumenthal, familiar from television, I can’t help my expectations climbing high.

In addition to oysters and charcuterie, there is a 3, 5, 7 or 9 course option, with slight changes daily according to what is in season. This time, we choose from the special tasting menu and receive a vegetable dish, seafood dish, meat dish and dessert each.


The first dish I chose was Sardine Fossils, Chickpea and Pickled Melon.
Each was not only beautiful but also had its own flavour and texture, stimulating the appetite.
Just as I was getting excited, thinking, “Hors d’oeuvres! This place must be serious,” the Beetroot &Ashed Goat’s Cheese arrived. Eating brilliant red beetroot and rare gold beetroot with goat’s cheese and orange sauce brings the flavours out in a kind of synergy.

For the seafood course, I ordered Scallop, Miso & Seaweed.
Perfectly cooked scallops superbly combine with crunchy seaweed and a rich, somehow familiar sauce – if I hadn’t already known I wouldn’t have guessed it had miso in it. Almost involuntarily, my eyes close and I sigh aloud in bliss.

The meat course is Venison, Broccoli & Chocolate. One might think venison would be strong or gamey, but I’m surprised to find it isn’t at all. On top of the tender venison are broccoli florets sauteed in butter, accented with artichoke sauce, chocolate sauce and subtly sweet fig jam.

For dessert, I chose Sour Cream, Pumpkin & Salted Caramel. In this dish, airy sponge cake made with olive oil, crisp roast pumpkin, and salty-sweet caramel sauce harmonize in taste and texture with the pleasant coolness of frozen sour cream.

All the dishes had beauty, complexity and depth of flavour.
Yet, the flavours of the original ingredients still come through, and the food is not overly rich, so even fussy eaters should enjoy it. Even the plates that the food was served on were unique and lovely.

This restaurant is creative and exploratory with both ingredients and presentation.
With its just-the-right-amount-of-casual atmosphere, Estelle Bar & Kitchen could set the scene for all sorts of occasions.
Next time perhaps I’ll ask a there friend to lunch.
