食に関して保守的なオーストラリアでは、日本人は日本料理、フランス人はフランス料理と、
シェフの国籍=その国の料理が正当な物、という固定観念が強い。
恐らくそれは、国際色豊かなこの国ならではの歴史の産物かもしれない。
日本では日本人シェフが作る、フランス料理やイタリア料理を食する事はごく当たり前だった私にとって、
「誰が作ろうとおいしい物はおいしい」と素直に感じられる。
それゆえに、この地で敢えてその逆境にチャレンジしようとしているシェフには、心から熱いエールを送りたくなる。
QVの一角にあるDuck Duck Gooseの北原シェフは、そんなパイオニアの1人。
10月からこれまでのカジュアルダイニングのチャイニーズビストロをカジュアルフレンチに形態を変え、
これまでのファインダイニングのフレンチと、二つの異なるコンセプトで展開するこの店。
TPOに併せて利用できるのが嬉しい。
フレンチのヘッドシェフとして、昨年10月からこの店で活躍していると風の噂で知り、
今回は幸運にも北原シェフのアートワークを体験できる機会に恵まれた。
温菜のSmoked Abalone Ravioliは、
上質なアワビの食感を主役にそれぞれの食材がバランス良く口の中で楽しく踊る一品。

トマトフォンデュのさわやかな酸味が全体の味を引き締めてくれる。
冷菜のOcean Trout Confitに は、完全ノックアウトされた。
身の美しく整った旬のトラウトは、まったりとした食感と、心地よい塩加減が後を引く。
昆布で味付けされたフェンネルのサラダ との相性は、言うまでもないだろう。
ところどころに見られる和のテイストが、嫌みなくフレンチと融合され、シェフの技術の高さが垣間見られる。
国内外から厳選された豊富なワインや冷酒のリストから、料理に合った一杯をリクエストするのも良いだろう。
メインのRoasted Venisonは、あっさりとしたシカ肉のステーキを、フルーティーで深味のあるソースと一緒に。
Ocean Trout Confit $25
普段あまり口にしないシカ肉だが、癖がなく柔らかい肉で実においしい。
味はさることながら、この店へ来たら、料理の美しいプレゼンテーションも楽しんで欲しい。
デザートのChestnuts Mont-Blancは、手をつけるのが惜しい程の芸術作品。

カシスの酸味のあるソルベと、優しい栗の甘さに心を奪われた。
北原シェフの真摯さと温かさが伝わって来る料理の品々。
食にヒーリング効果を求めている人がいたら、この店を勧めたい。
そして、その際はデザートの注文もお忘れなく。
この店の予約を取るのが難しくなる前に是非味わって欲しい。

Aussies are known as somewhat conservative, and seem to follow a set of stereotypes when it comes to food. Many of them believe that it is legitimate and authentic for Japanese chefs to cook only Japanese cuisine, French chefs to cook French cuisine, and so on. I think it might be an ideological byproduct of this multicultural country. On the other hand, as it was nothing special to enjoy French or Italian dishes cooked by Japanese chefs back in Japan, I could accept any dishes regardless of whoever cooks it, as long as it tastes great! Therefore, I want to send hearty cheers to chefs who are trying to break ground under adverse conditions in this country.
The head chef of Duck Duck Goose, Mr. Kitahara is one of these pioneers. The restaurant is located on the corner of QV building and uniquely has 2 different faces- casual Chinese dining and fine French dining, and you can choose the dining depending on your needs. I had heard of his success on the grapevine and I was privileged to experience his French masterpieces this time I visited.
The warm appetizer, Smoked Abalone Ravioli, was an enjoyable dish to start with. The textured, high quality abalone had a featuring role, with each ingredient well balanced and dancing in my mouth. A refreshing acidic flavour of tomato fondue brought it all together. The cold appetizer, Ocean Trout Confit, totally knocked me out. Beautifully firm trout fillet that was so fresh with a great texture and subtle saltiness made it hard for me to put down my knife and fork. A fennel salad marinated with konbu was the perfect marriage to the fish.
Each dish offered a glimpse of Japanese tastes and was comfortably blended with the French dishes Mr. Kitahara creates. I would say it highlighted his sophisticated cooking techniques. Also, a good idea is to request that one of the well-trained staff suggest a glass of wine or sake to go with each dish.
The main dish I ate, Roasted Venison, was definitely the winner. Venison is not really common on my dinner table but the non-fatty and tender medium-rare steak was so tasty. The fruity, yet deep flavoured sauce went very well with the steak. Not only the taste but the beautiful presentation, like pieces of artworks, would be another reason to return to the restaurant.
The dessert, Chestnuts Mont-Blanc was seasonally enjoyable dish. I was totally in love with sour of the sorbet and gentle sweetness of chestnuts.
Each dish presented Mr. Kitahara’s sincerity and personal warmth. I would definitely recommend this place if you are seeking to enjoy the healing qualities in food. And please do not forget to order a dessert! It may not be affordable for everyone to come here on a regular basis, but my suggestion is to visit before it gets too difficult to make a booking.
