フレンチとジャパニーズのマリアージュ-Heirloom

交通や通信が目まぐるしくの発達している21世紀。

食の国境がなくなりつつある現代にフュージョン料理は生まれた。

各国の誇りとなる味を融合したボーダレスな料理は、オーストラリアだけでなく世界中に広まっている。

一方、Heirloomは、バックグラウンドの全く異なるフレンチシェフのKyle Doody氏と、

日本料理シェフの野中氏が作り出した、フュージョン料理のその先を行く、

世代レストラン。

西洋と東洋の相反する食の情熱がぶつかり合った時、

一体どんな味が生まれるのか。全く想像がつかないまま、レストランに足を踏み入れた。

自然光が差し込む高い天井の広々とした店内は、落ち着いた大人の空間。

はカフェ、昼夜はレストラン・バーと1日にいろいろな顔を持つが、

今回はランチメニューを用意してもらった。

旬の食材にこだわりを持つだけあって、

1目はベジタリアンランチコースメニューからメイン料理の野生キノコを使った料理。

基本はバター等を使ったフレンチだが、禅宗の庭のような美しいプレゼンテーションに「和」を感じる。

雑穀のキノアやパール麦は薄味ながらも舌に残るしっかりとした味付けがされていて、

キノコとの歯ごたえと一緒に楽しめる。

ベジタリアンでない人にもお勧めしたい一品。

2品目はHeirloom Express Lunchのメイン料理。

新鮮な鶏のムネ肉、もも肉等を使用し、コロッケ状に揚げられた鶏肉は、

椎茸等の野菜と一緒に調理されている。

シンプルだが噛みしめるごとに味わい深い。

酸味のあるジャガイモのサラダが全体の味を引きしめてくれる。

塩漬けした手羽は、キーンと冷えた白ワインと一緒に。

ランチは単品もあるが、季節ごとに内容が変わるランチコースはお得感がある。

前菜、メインに紅茶かコーヒー、またはグラスワインがついて30ドルだ。

物心付いた頃から自分の天職はシェフと確信していたと言うDoody氏。

「一見全く対照的なフレンチと日本料理だが、実は共通点がたくさんある」と語る。

旬の食材を使用し、最高のうまみを引き出した料理へのこだわりや、見た目も

楽しませてくれる料理の数々。

なぜ異なる文化の二人が理解し合えたか、料理を目の前にして納得できた。

たまには、自分へのご褒美に極上のランチを味わってはどうだろう。

あるいは、おこもり感たっぷりのSake Barで、上質な寿司や焼き鳥を味わいながら、

熱燗でほっこりするのも良いかもしれない。

Traffic and communications move fast each day in the 21st century.

Fusion cuisine was born while the borderlines of gastronomic culture dissolved.

These dishes, which combine the pride from different countries, are spreading around the world.

Meanwhile, Heirloom was launched this year by a French chef, Mr Kyle Doody and a Japanese

chef, Mr Nonaka who have totally different backgrounds.

It is in a sense a new generation of restaurants- one step ahead of fusion cuisine.

I was wondering what tastes would be created when two passionate food traditions clash.

I entered the restaurant without even beginning to imagine.

Heirloom’s very spacious tranquil interior, with high ceilings and gentle natural

light has an adult sophistication.

Heirloom has different faces depending on what time you visit; in my visit I experienced lunch.

The first dish was a wild mushroom dish from vegetarian lunch course menu.

Seasonal fresh ingredients are the key of this restaurant, and despite it being a

French dish based on the butter flavour, the beautiful presentation reminded me

of a Japanese Zen garden. Quinoa and pearl barley has a very subtle flavour and

saltiness, yet had a depth of character, and with the texture of wild mushrooms,

was very entertaining. Highly recommended for even non-vegetarians!

The second dish was the main dish from Heirloom Express Lunch.

The croquette shaped dish using fresh chicken breast and leg was cooked with

mushroom and vegetables.

Quite simple but the deep flavour lingers nicely whilst eating.

The side dish of a sourish potato salad controls the chicken dish perfectly.

The brined wing goes well with icy white wine. Heirloom also serves single dishes,

but the lunch deals- which change seasonally- include entrée, main and a hot

beverage or glass of wine, cost $30 which I think it is a great deal.

Mr Doody said he knew in his bones that becoming a chef was his natural

calling ever since he was old enough to talk.

“ It seems like French and Japanese cuisines are totally opposite,

but they have many things in common.”

Heirloom’s consistently extracts the best flavour of seasonal ingredients,

and is visually entertaining in each dish.

I was convinced these two different cultures came to understand each other

after experiencing their art works.
