インド料理でスパイシーなひと時を-Shiraaz

世界人口第2位の大国インドで生まれた料理。

全身を包み込むようなスパイスの香りは、

誰もが食欲をそそられる、胃腸を活発にしてくれるアロマセラピーだと思う。

ファストフード系のインド料理が多い中、Shiraazは本格的なインド料理を堪能できるレストラン。

“一流” という意味の名前が付けられたこの店は、上品で自信に充ち溢れた空気が漂う。

スタッフに勧められ、座り心地の良い椅子に腰掛けると、

早速、オーナーKoli 氏が勧める前菜が運ばれてきた。

 

 

 

 

 

 

(Shiraaz Mix Sizller $27.50)

 

Tandoori Sizzlerと呼ばれるこの一皿、棒状のAchari Chicken TikkaTandoori Chicken

そしてラムチョップが、熱々の鉄板上で、「早く食べてくれ」とばかりに音を立てている。

ヨーグルト、ウコン等の香辛料にしっかりと付け込まれたTandoori Chickenは、

心地よい辛みで食欲にエンジンが掛かる。

Achari Chicken Tikkaは、上品な塩加減と香辛料でおいしい。

どの料理も、嫌みのないスパイスのさじ加減がうれしい。

ところで、“タンドリ” は、スパイスの種類と誤解していたが、

実はタンドゥールと呼ばれる壺釜で焼いた料理の事だと聞いた。

誤解と言えば、香辛料を使ったインドの煮込み料理を、

すべて「インドカレー」とひと括りで考えている人が多いが、それは大きな間違い。

「カレー」と呼び始めたのは、西洋人だったとか。

語源には諸説があるが、タミル語で「食事」を意味する「カリー」とされている。

メインにはカラフルな3種類の煮込み料理Goan Fish Curry(黄)、Chicken TikkaMasala(赤)、

そしてPalak Panee緑)が美しくテーブルに並んだ。

ココナッツミルクと白身魚のマイルドな辛さのGoan Fish Curryは、

バスマティ米との相性が抜群。

中でも一番気に入ったのは、自家製のカッテージチーズとほうれん草で作られたPalak Paneer

塩気を殆ど感じないあっさりチーズの歯ごたえと、

じっくり煮込まれた中辛のほうれん草のソースは病み付きつきになる味。

料理の引き立て役のナンブレッドは、チーズナンやガーリックナン等、種類が豊富なのもうれしい。

食後は、口直しの自家製アイスPistachio Kultiがお勧め。

甘みを抑えたマンゴーラッシーも是非お試しあれ。

気になる値段だが、高級感あふれる店の雰囲気と手を掛けた料理の数々とは相反してお手頃。

ランチには$14.50からのセットメニューもある。

特別な夜には、新たにオープンしたDocklands店で、スパイシーな時間を過ごすのも良いだろう。

Indian cuisine was created in the country with the worlds second largest population.

Whilst most of the Indian restaurants are fast food style, Shiraaz,

which means superior, is the place to feast on the real thing.

As we push open the entrance door with high expectations, the aroma of spices enfolds our

entire body and stimulates our appetite, as if it were an aromatherapy to energise our

stomach.

Shiraazs interior is very elegant and atmosphere full-hearted.

Shortly after the staff guided us to the comfy seat, our appetizer, as recommended by the

owner Mr. Koli, was delivered to our table.

The first dish, Tandoori Sizzler, consists of Achari Chicken Tikka, Tandoori Chicken and Ram

chop, all literally sizzling on the iron plate.

It sounded like Please eat us! to me.

The Tandoori Chicken, which is deeply marinated in yogurt, turmeric and other spices, was

moderately hot, which totally opened my appetite.

The sophisticated saltiness and flavour of Achari Chicken Tikka was so tasty.

I truly appreciated and enjoyed the right touch and mix of spices.

By the way, I recently found out that I had misunderstood the actual meaning of Tandoori.

I thought it referred to the type of spices, but it actually refers to

dishes which are cooked by a cylindrical clay oven called Tandoor.

Speaking of misunderstandings, many people believe Indian Curries are stewed Indian

dishes with spices, this is incorrect. It is said that Caucasians originally referred to

these dishes as Indian curries. There are various theories as to the meaning of

curry, however curry does mean meal in Tamil.

As a main we feasted on 3 colorful dishes, Goan Fish Curry (Yellow), Chicken

Tikka Masala (Red), and Palak Paneer (Green), as placed on our table.

Mildly hot Goan Fish Curry, which is made with coconut milk and white fish, goes well with

Basmati rice.

The winner of the day was Palak Paneer, which is a vegetarian dish.

It is made with home made cottage cheese and spinach. The great combination

of uniquely textured non salty cheese and slow cooked spinach sauce was very

deep in flavour and addictive. There are also varieties of naan bread, garlic naan

being my favourite.

Pistachio Kulti is highly recommended as a dessert for refreshing your mouth.

Mango Lassi would be another option also. The prices are surprisingly reasonable,

considering its high class atmosphere and that a great deal of time and

effort is invested into each dish. The Lunch set menu starts from $14.50.
