ゆったり流れるおいしい時間 - Philippe(2018年6月号)

結婚記念日や誕生日などのイベントが近付くとレストランのリサーチに明け暮れる。そんな経験をしているのは私だけではないのでは。そこでお勧めしたいのが、メルボルンCBD内にあるフランス料理店Philippe。オーナーシェフのPhilippeさんは、フランスを代表する店Paul Bocuseで修行し、Paul Bocuse日本進出の際には、日本に滞在し腕を振るった人物。今回は看板メニューとも言えるPhilippe's Classicsをいただいた。

 地下にあるせいか、どこか隠れ家的な雰囲気が漂う店内。最初に運ばれて来たのは、カジュアルな雰囲気のQuail & Foie gras parfait, red currant & orange ginger jam, toasted brioche。濃厚なウズラとフォアグラのパテは、ほのかな甘みと爽やかさを持つカシスとオレンジのジャムで、コッテリとしているのに軽い口当たり。今後の料理をより楽しむための小さな前菜と言った趣の一品だ。

続いては、彩り豊かで可憐な装いのBeetroot cured Ora King salmon gravlax, potato salad, walnut mayonnaise。 ビートルートとジンで漬けられたサーモン、ポテトなどの野菜がさいの目切りになったポテトサラダの組み合せは、素材それぞれの味や食感がグッと引き立って いる。サーモンのトロリとした食感とほんのりとした塩気、野菜のコリッとした食感とかすかな甘みが絶妙なバランスで、思わず無言で食べてしまった。

誰もが「初めての来店ならこのメニューはマスト」と口を揃えるBannockburn chicken rôtissoire, mushrooms, potatoes, natural jus。店のいち押しと聞いて、いやが上にも期待が高まる。今まで鶏肉の食感を表すのに”ムッチリ”という表現を使っていたが、ここのは”ふっくら”としていて”なめらか”。鶏肉にこの表現はピンとこないと思うが、一度食べたら納得するはず。食感もさることながら「チキンてこんなに優しい味わいなんだ」と思わせる滋味に富んだ優しい味わい。この料理は、絶対食べて欲しい。ちなみに付け合わせには、歯ごたえのあるSautéed green beans, shallots, baconがお勧め。

最後はふたつのデザート。リッチな味わいのMichel Cluizel chocolate caramel pear fondant, vanilla bean ice creamは、サックリとしたチョコレートの焼き菓子の中にトロリとしたキャラメルと角切りの洋梨が入っていて、この季節にピッタリ。

もうひとつは、『雪の卵』という意味を持つOeuf à la neige, quince mousse, rosemary ice-cream。カリンのムースが隠れたメレンゲ『雪の卵』が、淡いピンクのソースに浮かぶ島のよう。充実した食事の後でも、するりとお腹に収まる軽い口当たりが魅力的。

伝統を踏まえつつ新しい。心と体を満たす料理と、プロフェッショナルなサービス。大切な人とゆったり食事したいときや、誕生日などのちょっぴり特別な日に訪れたくなる店。ごちそうさまでした。

 

Let time pass you by while enjoying delicious food

Whenever special days like anniversaries or birthdays roll around, I seem to spend all my spare time researching restaurants where we can help celebrate them. I’m sure I’m not the only one, either. That’s why this month, I’d like to recommend Phillipe, a French restaurant in the CBD. Owner-chef Phillipe Mouchel spent time training under the legendary Paul Bocuse, and helped out when Bocuse opened his first Japanese restaurant, so there’s no doubting his skill, and this month, we got to try his signature ‘Phillipe’s Classics’ menu.

Whether it was because the restaurant was underground, or some other reason we couldn’t put our finger on, there was a sense this spot was a little hideaway. Irrespective, we dived straight in. First up, the quail and foie gras parfait, with red current and orange ginger jam and toasted brioche. A casual starter, the rich quail and foie gras paté combined perfectly with the light and softly sweetened currant and orange jam, creating a light, yet luxurious experience. It’s a refined entrée that serves to heighten your excitement for the food to come.

Next came the colourful and cute beetroot cured Ora king salmon gravlax with potato salad and walnut mayonnaise. Curing the salmon in beetroot and gin, along with cubing the vegetables in the potato salad, made the most of the tastes and textures of each individual ingredient. The silky texture and faint saltiness of the salmon, combined with the crunch and gentle sweetness of the vegetables, made for such an incredible balance that we ended up eating the dish in silence, unable to concentrate on anything else.

Guaranteed to be on the list of ‘must haves’ for first timers here at Phillipe was the Bannockburn chicken rôtissoire, with mushrooms, potatoes and natural jus that followed. Our excitement for this item climbed even higher after hearing this was the establishment’s signature dish, and it didn’t disappoint. Until now, I’ve used the words ‘plump’ and ‘juicy’ to describe chicken, but here, ‘fluffy’ and ‘silky’ are the most appropriate. That may sound strange, but one taste and you’ll understand why. “Chicken can have this gentle a flavour?!” I thought to myself, after savouring the rich, yet subtle flavours. This is one dish you have to try. If you’re looking for something to pair it with, I’d recommend the sautéed green beans, shallots and bacon.

Finally, we enjoyed two different desserts. The rich Michel Cluizel chocolate caramel pear fondant with vanilla ice cream placed a rich caramel and cubed pear fondant inside a light, baked chocolate dessert and matched perfectly with the season, while the Oeuf à la neige (‘snow egg’) with quince mousse and rosemary ice cream was a wonderfully light way to end such a satisfying meal, with its mousse hidden inside a meringue ‘egg’ that floated like an island on a pale pink sauce.
