ストリート感ある新インディアン - Mukka (2017年12月号)

夏になると無性に食べたくなるインド料理。しかしなぜかインド料理店は食堂系か、ファインダイニング系に二分化されているような気がする。開放的な雰囲気で、カジュアルだけどインテリアにも気を使っていて、気軽に立ち寄れる価格設定で、もちろん味も良くて、更に目新しい料理があれば…と、とどまるところを知らない私の希望。そんな私の欲張りな願いを叶える店がMukka。オーナーのPrateekさんお勧めの、夏にピッタリな料理をいただいた。

アルミのボウルで登場したのはBhel puri。インド西海岸の都市ムンバイで人気のストリートフードで、トマトやキュウリの乱切りと共にライスパフが入った、インド版サルサといった感じの一品。スカッとしたキレのある辛さと、爽やかなライムの香りで暑さを吹き飛ばしてくれそうだ。

鼻孔をくすぐる香りと共にサーブされたのは、Spicy lamb chops。ジューシーで柔らかいラムは、しっかりマリネされていてスパイスが効いている。ラムが苦手な人でも食べられそうだ。付け合せのコリアンダーのチャットニーと合わせると、グッとマイルドな味わいになるから不思議。ビールのお供にピッタリなので、お試しを。

続いて南インドで食べられているDosaのThe classic。Dosaは米とレンズ豆から作るクレープで、ほんのり塩気があり、そのまま食べてもおいしい。そのDosaでいろいろな具を包むが、じゃがいものスパイス炒めを包むのが王道だそう。ここのは、生姜の風味がふんわり効いた滋味深い味わいのじゃがいも炒めがたっぷり入っていて、食べごたえあり。野菜と豆のスープSambar dal やココナッツチャットニーを付けて食べると、味の変化が楽しめる。

トロピカルな見た目のBanana leaf fish fryは、バナナの葉を開けた時に、フワッとスパイシーな香りが空中に広がるのがたまらない。あっさりとした白身魚に、コクがあるのにスッキリとした辛さが印象的なソースが良く合っていて、いくらでも食べられそう。お饅頭のようなフワフワの付け合せは、レンズ豆で作った蒸し物で、新感覚の食感。

人気のButter chickenは、他店より甘目でクリーミー。バターチキンは後味がベタついた店が多いのだが、ここのはサラリとしているので、もう少しと手が伸びて気が付けば完食していた。もちろんお供は、食欲をそそる香りのGarlic Naanで決まり。

スパイシーな料理の後は、かわいらしい色合いのデザートBombay falooda kulfi。Faloodaは、中東から南アジアにかけて人気のデザートドリンク。ピスタチオアイスが浮かぶローズシロップに、素麺のような細い麺が入っているのがおもしろい。かなり甘いが、カルダモンが効いて微かにピリッとした刺激があり、独特の香りがエキゾチック。

北と南出身のシェフを置き、インド全土のモダンな料理が楽しめる店。カフェに立ち寄るように、気軽に入れる雰囲気と値段が魅力的だ。ちなみに、年末年始の休みは12月25日のクリスマスのみ。ごちそうさまでした

 

Indian food with a street vibe

Come summer, you always end up with an insatiable desire for Indian cuisine. However, Melbourne's Indian restaurants only ever seem to fall into two categories - cheap and cheerful, or fine dining. If you're looking for a spacious, decently-appointed, reasonably-priced, delicious (and ideally innovative) fast casual-style establishment, you are often out of luck. However, Mukka somehow manages to tick all those boxes - something we found out after enjoying owner Prateek's recommendations.

The Bhel Puri, a popular Mumbai street dish that combines tomato, cucumber and rice puffs into something akin to an Indian salsa, turned up in an aluminium bowl. Thanks to its mix of cutting spice and refreshing lime, it really felt like it could blow away the summer heat.

Next up, the Spicy lamb chops arrived, complete with a very inviting aroma. The juicy, tender lamb had been marinated well, with the spices front and centre, as per the name. Even those who dislike lamb could eat this. The strange thing about this dish is how mild the taste becomes when eaten with the accompanying coriander chutney. It's perfect with a cold beer, so definitely give this one a go.

Following on, we tried 'The Classic' variation of the Dosa. A south-Indian staple, Dosa is a crepe made with rice and lentils and stuffed with various fillings, although the most common (hence The Classic) is spiced potato. With just a hint of salt, the crepe is delicious by itself, but the plentiful fried potatoes, with their hint of ginger, provide a deep, rich flavour and substantive texture. By eating it with either the Sambar dal (made with vegetables and beans), or coconut chutney, you can enjoy a range of different flavours, too.

The tropical-looking Banana leaf fish fry provided a wonderful burst of delicious, spicy smells when the leaf was unwrapped. The combination of lightly-flavoured white fish and deeply-flavoured, yet somehow refreshing spicy sauce worked so well that we could have eaten it all day. The accompanying manju-like steamed dumplings, made from lentils, were soft, fluffy, and a completely new taste experience.

Butter chicken is an Indian restaurant staple, but here, it was sweeter than many other places, and very creamy. Many establishments' butter chicken has a strong, cloying aftertaste, but Mukka's is smooth, meaning you just keep reaching for more, and before you know it, have cleaned your plate. Of course, you have to eat it with the ever-tempting Garlic naan.

In stark contrast to all this spice, we finished off dinner with the cutely-coloured Bombay falooda kulfi. Falooda is a popular dessert drink, served from the Middle East through to South East Asia. In our example, pistachio ice cream floated on a rose syrup, filled with thin, soumen-style noodles. Very interesting. It was extremely sweet, but the faint taste of cardamom cut through, adding an extra stimulus and giving it a unique, exotic aroma.

With chefs from both north and south India, Mukka offers modern Indian cuisine that covers the whole continent. The welcoming, cafe-like atmosphere and low prices especially are big draws, and apart from Christmas Day, it's open throughout the end of year festivities. Gotchisousamadeshita.
