観光スポットでペルーをいただく- PASTUSO (2015年1月号)

メルボルンCBD内の散策の醍醐味は、小さな通りに思わぬ発見があるところ。最近は、このメルボルンの小道文化を楽しみに、他州から多くの人が訪れている。オーストラリアを代表するバンド名が付いたACDC Laneは、毎日多くの人々が壁に描かれたグラフィティ目当てに、カメラ片手に訪れる観光スポットのひとつ。そこに今回紹介するペルー料理店のPASTUSOがある。最近、グルメの国と注目を浴びるペルー。この時期に合いそうな料理をいただいた。

PASTUSO

ペルー料理は、温暖な気候の恵みを受けた新鮮な魚介類、野菜、果物などを使い、先住民族の食文化に、スペイン、アフリカ、イタリア、中国、日本など、さまざまな食文化が混ざり合っているのが特徴。まずは、涼しげな雰囲気のCeviche peruano。赤玉ねぎ、ライム、唐辛子でマリネされたニュージーランド産の新鮮な鯛に、スイートポテトのほのかな甘みと、揚げたコーンの香ばしさが、アクセントになっている。なんでも、スイートポテトを合わせるのがペルー風なのだとか。食感の違いも楽しく、サッパリとした中にピリッとした刺激がある夏向きの一品。

食欲をそそる香りと共に登場したのは、牛の心臓とカジキの串焼きが楽しめるAnticuchos。ミディアムレアに焼かれ、タンドリーチキンを彷彿させるスパイシーな味付けの心臓は、思ったよりやわらかく食べやすくて、ビックリ。とろけるような食感のカジキは、スパイシーでありながらどこかアジア的で、ちょっぴりご飯が恋しくなる味。付け合わせの甘いコーンと串焼きの味のコントラストも良い。CevicheとAnticuchosは、どちらもペルーの代表料理なので、お試しを。お供にペルーの蒸留酒ピスコを使ったカクテルを合わせるのも良いかも。

ペルーらしいデザートということで、Un clasico de mazamorra y arroz con lecheを。粒がしっかり残るペルースタイルのライスプディングに、南米原産の紫トウモロコシのジェル、甘酸っぱく煮たリンゴとパイナップルがのったひと皿。とかく重くなりがちなライスプディングが、酸味のあるトッピングで、スルリと食べやすい仕上がりになっている。

メルボルンらしい場所にあり、店内は中央のバーを境に雰囲気が変わるので、グループご飯にもデートにも使えそう。年末年始の休みは、12月25日(木)、26日(金)、1月1日(木)だけなので、多くのレストランが閉まってしまうこの時期には貴重な存在。他州や日本から来た友達を連れて行けば、喜ばれること間違いなし。ごちそうさまでした。

 

One of the chief pleasures of a stroll in Melbourne is making unexpected discoveries down its laneways. Recently many people have been coming to Melbourne to enjoy its laneway culture. One such tourist attraction is AC/DC Lane, named for a famous Australian band. AC/DC Lane’s graffiti-covered walls attract scores of visitors daily with their cameras in hand, and is the location of Peruvian restaurant ‘Pastuso’. Peru has recently been getting a lot of attention as a gourmet country. I order some food to suit the season. 

Peru is blessed with a warm climate, so its cuisine features fresh seafood, vegetables and fruit. It is characterised by a mix of culinary influences, including Spanish, African, Italian, Chinese, Japanese, and the traditional cuisines of Peru’s indigenous peoples. 

First I try the refreshing ‘Ceviche peruano’. I am served fresh New Zealand snapper in a marinade of lime, red onion, and chili, accented by the subtle sweetness of sweet potato and the fragrance of grilled corn. Apparently it’s very Peruvian to serve ceviche with sweet potato. This summery dish is refreshing but also has bursts of spicy chili, and the textural contrasts are fun too. 

Arriving next and smelling delicious is ‘Anticuchos’, which features beef heart and swordfish skewers. The medium-rare beef heart is surprisingly tender, and has a spicy seasoning that reminds me of tandoori chicken. The melt-in-your-mouth swordfish has a spicy and somehow Asian flavour, giving me a faint longing for rice to go with it. The sweetness of the corn on the side is an enjoyable flavour contrast with the skewers. Ceviche and Anticuchos are both dishes Peru is famous for, so make sure to try them. And maybe a cocktail made with the Peruvian spirit pisco would go well alongside. 

I choose a typical Peruvian dessert - ‘Un clasico de mazamorra y arroz con leche’. In this dish, Peruvian style rice pudding (with rice grains still fully intact) is topped with South American purple corn gel and with poached apples and pineapples. Rice pudding can tend to be heavy, but with this tart-and-sweet topping it goes down easy.

In a very Melbourne location, Pastuso has a different atmosphere on either side of its central bar, so it could be a good location for group meals or dates alike. Over Christmas and New Year they are closed only on 25 December, 26 December and 1 January, so it’s one of the precious few restaurants that will open in this period. If you take an interstate or friend from Japan to Pastuso, they’ll be delighted for sure. Gochisosama deshita.
