王道の四川料理が楽しめる隠れた名店-Sichuan House(2014年12月号)

この数年で、アジアンテイストを取り入れた創作料理やちょぴりモダンなアジア料理店が増えた。個人的には、どんな料理でもおいしければ良いというタイプなので、意外な食材の組み合わせで料理の世界が広がるのは大歓迎。しかし、その一方で時々猛烈に正統派料理が恋しくなることもある。そこで、これぞ王道と呼びたくなる四川料理が楽しめるSichuan Houseに出掛けた。中華料理は、地方ごとに食材や調理法、味付けなどが違い、四川料理は、唐辛子や山椒に似た花椒(かしょう)などの香辛料を効かせたスッキリとした辛さが特徴。そして今回は、マネージャーのVivianさんが勧める、この季節にピッタリなメニューをいただいた。

「暑い日には、こんな前菜も良いんじゃない?」と運ばれてきたのが、Spice clam meat。香ばしいラー油と爽やかなコリアンダーがクラムの味を引き立てる冷たい前菜。辛いけど、ついつい箸が伸びること間違いなしの涼しげなひと皿。ビールや冷たいお酒に良く合いそう。

続いて、海老が山のようにこんもりと盛られ、豪華な野菜の飾り切りが目を引くGold sand prawn。プリプリの海老に、サックリ濃厚卵味の衣、Sandと表現される少しザラリとした甘いソースの食感の違いが楽しい。濃厚な味の秘密は、鶏卵でなくアヒルの卵を使用しているからだとか。この味わいは、なかなか出会えないので、是非お試しを。

「見た目が地味だから知っている人しかオーダーしてくれないけど、私のお勧めなの。食べてみて」とテーブルに置かれたSpice & sour potato shreds。確かに最初の2品と比べると華やかさには欠ける。しかし、食べてみるとシャキシャキとしたじゃか芋に、黒酢のさっぱり感と、時々ピリッと感じるチリのバランスが絶妙で病み付きになりそう。

人気のメニューのChongqing chickenは、山盛りのチリに圧倒されるが、意を決して鶏肉に手を伸ばす…と、思ったより辛くない。塩胡椒がよく効いた、ひと口サイズの唐揚げのようで、つい調子に乗って食べ進む。すると、後からじんわり辛さがやってくる。これは、ビールのお供にピッタリだ。

料理コンペ番組のジャッジもお供を引き連れて訪れるという隠れた名店。デートというよりは、大人数で行ってワイワイいろいろな料理をシェアして楽しむ食事会向け。辛さもリクエストに応えて調整してくれるし、好みを伝えてお勧め料理を出してもらっても良い。今年の忘年会・新年会は、お酒とも良く合い、暑い夏を元気に乗り越えられそうな四川料理を楽しんでみては。ごちそうさまでした。

 

In the last few years restaurants featuring modern Asian cuisine or Asian-inspired creative cookery have been growing more numerous. Personally I think it doesn’t matter what sort of cuisine it is so long as it’s tasty, so I welcome the broadening of the culinary world through unexpected ingredient combinations. On the other hand, there are also times when I yearn for traditional cookery. This month I head to Sichuan House. Chinese cuisine differs regionally in terms of ingredients, cooking methods and seasonings; Sichuan cuisine is characterised by the fresh, spicy taste of Sichuan peppercorn (which is a bit like chilli or Japanese pepper). Today I try some seasonally appropriate dishes recommended by  manager Vivian. 

The first dish to arrive is ‘Spice clam meat’, and is just the right kind of appetizer for a hot day. In this chilled dish, the flavour of the clam is brought out by fragrant chilli oil and refreshing coriander. It’s spicy, but make no mistake, I keep  reaching  for more. This dish would go well with beer or chilled sake. 

Next is the eye-catching ‘Gold sand prawn’, a veritable mountain of prawns with extravagant vegetable decoration. Tender prawns are coated in a light yet rich egg-flavoured sauce, called ‘sand’ because of its slightly granulated feel. The contrast of textures is very enjoyable. The secret of the  richness of the sauce is the use of duck eggs rather than chicken eggs. This is a flavour you may not encounter often so definitely give it a try. 

‘This looks simple so only people who know it order it, but I recommend you give it a try,’ says Vivian as she brings to my table ‘Spiced & sour potato shreds’. It’s certainly lacking in glamour compared to the previous two dishes. However when I try some, the crisp potato, refreshing black vinegar and occasional pique of chilli are in such perfect balance that I could become addicted. 

The popular menu item ‘Chongqing chicken’ has heaps of chilli on it, so I ready myself before eating and... It’s not as spicy as I expected. It’s like bite-sized fried chicken that is well-seasoned with salt and pepper. I get carried away and eat quite a bit, and the spiciness gradually increases. This is a dish that would go perfectly with beer. 

Sichuan House is a hidden gem of a restaurant where you could even take a competitive cooking show judge (Masterchef judges and Iron Chefs have been known to dine here). More so than dates, this is a place best for taking a big, noisy group and having fun sharing lots of different dishes. Staff will adjust spiciness by request, or you can tell them your preferences and they will bring out some recommended dishes. For something that could go well with alcohol and get you through this summer’s New Year parties, why not try some Sichuan cuisine? Gochisosama deshita.
