スパイスの恵み-Araliya(2014年3月号)

南アジアの料理と聞いて、皆さんはどの国の料理を思い浮かべますか。多くの人は、インド料理を思い浮かべるのでは。今回は、じんわり人々に浸透しつつあるスリランカ料理を紹介したいと思います。オープンから29年、3世代にわたって足を運ぶ常連客もいるというスリランカ料理の老舗『Araliya』。「スリランカは、周りを海で囲まれていることから魚介類をふんだんに使った料理がたくさんあるし、仏教国だから野菜料理も豊富なのよ」と、スタッフのDeeさん。そこで、シーフードを中心にいただきました。

スターターは、ほのかにエキゾチックな香りが食欲をそそるScallops in a ‘Hopper’。米粉で作られた繊細な器の中には、軽く火を通したホタテに、ちょっぴり甘くて、ちょっぴりスパイシーな複雑な味わいのココナッツペーストが絡んだ、見た目にも美しい一品。

メインには、Fish Roasted in Banana Leaves。バナナの葉で食材を包む伝統的な調理法で料理された存在感のあるブルーアイは、身がギュッと締まっていて食べ応えあり。香りも良く、魚とソースが渾然一体となったこのひと皿は、ご飯が進むこと間違いなし。ちなみに魚は、活きの良いものを使うため、その日によってバラマンディなどになることも。

メインのお供として登場したのが、野菜料理。スパイシーでトロトロのなすがなんとも言えぬおいしさのTwice cooked eggplant、食感の違いが楽しいFresh green beans & cashew nuts、ほんのり甘く、食べ出したら止まらないBatons of beetroot & turnip、じゃが芋とカルダモンの爽やかな香りが、絶妙な組み合わせのCardamom perfumed kipfler potatoes。どれも、それぞれ食材に合わせた調理法で、その魅力をグッと引き出している。ご飯との相性も良いし、サイドディッシュと呼んでしまうには、もったいないおいしさ。是非、お試しを。

デザートは、モダンなプレゼンテーションのParfait。濃厚なパッションフルーツのアイスに甘酸っぱいマンゴーソースを絡ませていただいて。スパイシーな食事のクールダウンにピッタリだ。

When you think of South Asian cuisine, what sort of food comes to mind? Perhaps many of you will think of Indian food. But today I’d like to introduce to you the cuisine of Sri Lanka, which is gradually becoming more popular. The Sri Lankan restaurant ‘Araliya’ has been open for 29 years and it’s said that three generations of some families have been regulars. ‘Sri Lanka is surrounded by ocean so some dishes use plenty of seafood,’ says staff member Dee, ‘but it’s also a Buddhist country so vegetarian food is abundant too.’ This visit I decided to focus on seafood dishes. 

My starter, ‘Scallops in a Hopper’, has a faintly exotic aroma that makes the mouth water. Lightly seared scallops are served in a delicate bowl made with rice flour, and covered in coconut paste with a complex but subtle sweet-spicy flavour. It’s very visually appealing.

The main course I try is ‘Fish Roasted in Banana Leaves’. Blue-Eye fillet is wrapped tightly in banana leaves, which are a traditional Sri Lankan cooking style. The dish is filling and has a delicious aroma- the flavours of the fish and the sauce harmonising beautifully. It would be easy to eat a lot of this. Incidentally, because ‘Araliya’ only use the freshest fish, sometimes Barramundi or other varieties may appear in this dish.

Alongside the main course are served some vegetable dishes. There’s the spicy, tender and indescribably delicious ‘Twice cooked eggplant’; the enjoyably contrasting textures of ‘Fresh green beans & cashew nuts’; the slightly sweet and very moreish ‘Batons of beetroot & turnip’; and the exquisite combination of flavours in the ‘Cardamom perfumed kipfler potatoes’. Each is cooked in a style that brings out the best in the ingredients. They would all go well with rice, too, and are so delicious that it’s almost a shame to order them as side dishes. You could well order one as a main.

For dessert, I have a modern-looking parfait, with rich passionfruit ice cream covered in a sweet-tart mango sauce. It’s perfect for cooling down after a spicy meal.
